WOMEN WITH BREAST CANCER experienced a significant decrease in the reproductive hormone estradiol after consuming a diet high in fiber. Researchers from the University of California--San Diego measured hormones that are thought to play a role in the development of breast cancer.
Women who increased the amount of vegetables and fruits while reducing fat had a decrease in bioavailable estradiol, which might have led to a decreased risk.
